Scott, originally from the UK, made the bold move to settle in Chengdu, located in southwest China’s Sichuan Province. Arriving a decade ago to work at a local school, Scott’s life took an unexpected turn when he met Tang Xin, a Chengdu native who would become his wife.
Beyond finding love, Scott immersed himself in the rich tapestry of Chengdu’s culture, particularly its renowned culinary scene. The vibrant flavors and aromas of Sichuan cuisine captivated him, with Kung Pao chicken becoming his favorite dish. This spicy and savory staple not only delighted his palate but also served as a gateway to understanding the depth of China’s food culture.
“The first time I tried Kung Pao chicken, it was a revelation,” Scott recalls. “The balance of heat, sweetness, and the crunch of peanuts was unlike anything I’d tasted back home.”
Embracing local traditions, Scott learned to prepare Kung Pao chicken under the guidance of his wife’s family, mastering the art of balancing Sichuan peppercorns and chili peppers to create the perfect dish. Today, Scott shares his passion by hosting cooking classes for fellow expatriates and locals alike, fostering connections through shared meals and stories. His experience highlights how embracing a new culture can lead to personal growth and lifelong passions.
